Cook brown rice macaroni according to instructions on the box. Preheat oven to Broil (high).
In medium sauce pan, heat on medium-low coconut oil, almond milk and cheese until cheese is just about to melt (save some cheese for later). Add cooked macaroni to the saucepan with the cheese mixture and stir to coat macaroni thoroughly. Add ½ teaspoon sea salt.
Once all macaroni is coated, add it to an 8x10 baking dish. Sprinkle rest of cheese, frozen spinach and then almond meal and sea salt and pepper on top. Put in oven and broil on high for 5 min until brown and crispy.
