Preheat oven to 325 degrees and line a 13x9 inch baking pan with parchment paper. Lightly coat parchment paper with a little coconut oil.
In a large bowl, mix together dry ingredients: oats, hemp seeds, chia seeds, almonds, pistachios, chocolate chips, almond flour and coconut palm sugar. In another bowl whisk together wet ingredients: egg whites, coconut oil, vanilla extract and honey. Add the wet ingredients to the dry ingredients and mix well. If desired, add sea salt.
Transfer granola mixture to prepared pan and using wet hands or a spatula, press firmly into an even layer. Bake at 325 degrees for approx. 30-35 min or until dark golden on top. Remove from oven and let cool in pan for 10 minutes. Cut into granola bar shapes (approx. 3.5 inch x 1.5 inch) and enjoy!
