Preheat oven to 450 degrees Fahrenheit.
Peel the sweet potatoes. If the potatoes are large, cut them in half and then thinly slice on a diagonal. Otherwise make 1 inch size pieces.
Pour coconut oil over the potatoes. Sprinkle with salt and place on a baking sheet, being careful not to crowd the pan. Bake for 15 minutes undisturbed or until crispy on the outside and cooked through.
