Chicken Fingers

Today, Arielle cleans up a childhood favorite – chicken fingers!  Clean eating doesn’t mean saying no to animal protein, it just depends on the quality of the meat.  Arielle chooses organic chicken for this recipe.

First, you will crack the eggs, which Arielle likes to use certified humane or pasture-raised eggs.  Dip your raw chicken into the eggs and then pat the chicken down into the almond meal mixture.  

Next, Arielle places coconut oil in a heated pan.  Coconut oil is antibacterial, anti-inflammatory and is high heat.  It’s great for “frying” stuff like chicken fingers.  Then you can add the chicken to your pan, making sure none of the chicken is overlapping.  Now you can add a little bit of salt and pepper, or you could’ve added it to the almond meal mixture.  

Once they’re golden brown on each side, which usually takes about 7 minutes per side, remove them from the pan and place on a plate.  Arielle likes to line the plate with paper towels to soak up any excess oil.  

So much better than fast food, and your body will be thanking you!  Don’t forget, read ingredients and eat well.  

 

 

Ingredients
  • 2 organic skin-less chicken cutlets
  • 2 cups almond meal/flour
  • Dash sea salt
  • 2 eggs (pasture-raised, certified humane)
  • ½ cup coconut oil
  • Dash pepper
Method
Rinse off chicken and cut into 1-inch strips In one bowl, mix together almond flour, sea salt and pepper In another bowl, whisk eggs Dip chicken strip into egg mixture and shake so the excess egg drops off Dip chicken strip into almond mixture and make sure all sides are coated well Repeat dipping in egg mixture then into almond mixture. Heat coconut oil on sauté pan to medium heat “Fry” each side until crispy (about 7 minutes per side)
