Clean Sweet Potato Fries

In this video on clean eating Arielle Haspel shows you a healthier way to eat sweet potato fries. When eating clean, you want to eat foods that will make you feel good and curb your cravings for sweets. Sweet vegetables, like sweet potatoes, beets and carrots, actually become sweeter when they’re cooked.

First, cut up 2-3 sweet potatoes into long, fries-shaped pieces. Place them evenly on a pan, making sure they do not overlap so each one gets crispy. Then drizzle on coconut oil and toss the fries around so each get covered, and sprinkle on a little sea salt. If you want to, you can even sprinkle on a little cinnamon to make them sweeter, or cayenne to make them a little spicy.

Next, put them in the oven on broil for about 6 minutes. Flip them once, and cook another 6 minutes. Sweet, warm and comforting!

Ingredients
  • 2-3 orange sweet potatoes
  • Dash sea salt
  • 2 teaspoons onion, grated
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons coconut oil
  • 3 tablespoons tomato paste
  • 1 clove garlic, minced
  • 1 teaspoon raw honey
Method
Cut sweet potatoes in half and then into sticks/fries (no need to peel them) Lay on a cookie sheet or parchment/tin-foil lined pan. Drizzle oil evenly over potatoes and sprinkle sea salt. Use a spray bottle for even distribution if you have one Broil in oven on high for approx 6 minutes. Flip over, then cook for another 6 minutes or until brown. To make ketchup: Combine tomato paste, grated onion, minced garlic, apple cider vinegar and raw honey. Stir well.
