They’re obviously super healthy, but still satisfy your sweet tooth.
Fruit is a great choice for a sweet treat when following a diabetic diet. In this episode of “Diabetes Bites” dietitian, Fiorella DiCarlo, shows you how to prepare your favorite delicious recipes in a way that’s healthy and diabetes-friendly. Today we have a recipe for a great apple snack for kids!
Baked apple chips is a healthy snack alternative, even though there is sugar in fruit, it is fructose. The fructose combined with the fiber in fruit is more slowly digested by the body and is better for your blood sugar than glucose or sucrose, which is table sugar. Fiorella walks you through the process of preparing these crispy snacks, from picking out the right apples to how to slice and bake them. Feel free to make changes and as always share your creations with us on our social media page!
An apple a day keeps the doctor away, and for good reason. Apples are extremely rich in antioxidants and dietary fiber, the antioxidants are natures medicine for fighting cancer, diabetes and heart disease. It is very important to incorporate apples and other fruits into your diet, so drop the chips and pick up an apple!
- 2 medium apples (Honeycrisp recommended)
- 1 teaspoon cinnamon
InstructionsPreheat oven to 200 degrees. Using a knife, or a mandolin, holding the apple with the stem on the side, slice apple into thin, round chips.You can also use other fruits such as pears. Place parchment paper onto baking sheet. Lay the apple slices onto the baking sheets. Sprinkle slices with cinnamon. Bake for about 1 hour, then flip over the apple slices. Continue baking for another 1-2 hours. Flip occasionally, and bake until the slices are no longer moist. Allow to cool for 10-20 minutes. Keep in an air-tight container to store.

00:00.000 --> 00:04.972
[SOUND] We're going to make a healthy
snack today that you are not going
00:04.972 --> 00:09.782
to believe is healthy for
you because it is so sweet and delicious.
00:09.782 --> 00:13.496
We're going to make some
healthy apple chips.
00:13.496 --> 00:17.600
00:17.600 --> 00:20.860
Today we're looking at some apples and
there's tons of varieties.
00:20.860 --> 00:24.220
I love the apples to be firm so
they don't have the mealy inside and
00:24.220 --> 00:26.400
they're easy to chop and crispy.
00:26.400 --> 00:30.450
Yes, there is sugar in fruit for sure,
but it's a different type of sugar.
00:30.450 --> 00:31.460
00:31.460 --> 00:33.380
Fruit also has fiber.
00:33.380 --> 00:37.877
And the fiber and the sugar together is
much more slowly digested and good for
00:37.877 --> 00:42.454
your blood sugar levels than sucrose or
glucose, which is just table sugar.
00:42.454 --> 00:44.960
For this recipe,
you can choose any apple you like.
00:44.960 --> 00:46.753
Today we're using Honeycrisp Crisp.
00:46.753 --> 00:50.497
And what you want to do in cutting it,
is you just kinda wanna place it forward.
00:50.497 --> 00:52.455
And we're gonna cut it in circles.
00:52.455 --> 00:56.575
And we're just gonna go ahead and
slice as thinly as you can, but
00:56.575 --> 01:00.640
not paper thin,
wanna keep it textured in there with that.
01:00.640 --> 01:01.549
There we are.
01:01.549 --> 01:05.500
And what you'll see as you cut, is you'll
see that the core and seeds are there.
01:05.500 --> 01:08.299
Don't worry too much about
coring the apple, but
01:08.299 --> 01:11.620
you can definitely take
the seeds out as you go along.
01:11.620 --> 01:14.990
Also, to cut these, you can also
use a mandolin if you have one.
01:14.990 --> 01:17.208
But, if not, a knife will work just fine.
01:17.208 --> 01:21.030
What you wanna do is keep the skin on
because that's where all of the fiber is
01:21.030 --> 01:25.230
and all of the vitamins are basically
in the skin, so don't peel your apples.
01:25.230 --> 01:28.575
The other thing you can do in
this recipe is add pears as well.
01:28.575 --> 01:31.441
Also, don't peel your pears,
because all the fiber and
01:31.441 --> 01:34.110
the vitamins in the pears
are also in the skin.
01:34.110 --> 01:37.630
Gonna take our apple slices, and we're
gonna place them onto the parchment paper.
01:37.630 --> 01:41.170
Just make sure that they're not touching
so that they can just crisp individually.
01:41.170 --> 01:46.580
And this is going to cook down in
the oven for about 200 degrees.
01:46.580 --> 01:49.420
So the next ingredient we're going
to add here, just to amplify and
01:49.420 --> 01:53.890
to strengthen the sweetness of this snack,
is we're going to put in some cinnamon.
01:53.890 --> 01:58.070
And interestingly enough, the cinnamon
actually lowers your blood sugar levels.
01:58.070 --> 02:00.080
So we're gonna go ahead and
sprinkle them on.
02:00.080 --> 02:03.720
And this is so much fun because this
reminds me of a recipe that my mom used to
02:03.720 --> 02:07.503
make when we used to come home from
school, with baked apples into the oven.
02:07.503 --> 02:10.610
And that is such a comfort aroma,
you're gonna love it.
02:10.610 --> 02:13.940
As soon as we put these in,
you're gonna start smelling that.
02:13.940 --> 02:15.547
Okay, now we're gonna
take them to the oven.
02:15.547 --> 02:17.956
And we're gonna set the oven
at about 200 degrees.
02:17.956 --> 02:21.538
And we're gonna go ahead and
put them in for about an hour.
02:21.538 --> 02:25.323
At that point, we're going to pull them
out and we're gonna flip them over so
02:25.323 --> 02:27.610
that the other side gets
a chance to crisp too.
02:27.610 --> 02:29.670
they're gonna be wet on the bottom.
02:29.670 --> 02:32.730
And you're gonna continue to do that for
about one to two hours,
02:32.730 --> 02:35.440
and flipping them occasionally so
they crisp up.
02:35.440 --> 02:39.530
We've taken our apple chips out of
the oven, and they've been cooling for
02:39.530 --> 02:40.520
about ten minutes.
02:40.520 --> 02:43.160
These are a great snack and
they're very portable.
02:43.160 --> 02:45.180
You can take them anywhere with you.
02:45.180 --> 02:45.750
There we are.
02:46.750 --> 02:50.157
Here we go with our healthy and
sweet apple chips.
02:50.157 --> 02:53.796
02:53.796 --> 02:58.147
Thank you so much for joining us at
Diabetes Bites, and see you next time.
