Everyone loves a salad who  packs a flavor punch! This Arugula salad has a combination of greens, citrus and cheese to deliver a truly unique recipe!

In this episode of Eating by Heart, Colombe shares one of her favorite salad recipes that makes this starter the star of your meal. All you need is arugula, blood oranges, mint, dates, almonds, Parmesan cheese, and a nice olive oil.

 

  • 4-5 cups arugula
  • 2 blood oranges
  • 4 Medjool dates (sliced)
  • 1/3 cup unsalted sliced almonds (toasted)
  • 16 slices Parmesan cheese
  • Mint for garnish
  • Olive Oil for drizzling
Place the arugula in a large bowl. Drizzle olive oil and toss to coat. Sprinkle with salt. Place a serving of arugula on a plate. Compose your salad with a few slices of orange, a sprinkling of almonds, some date pieces, slices of Parmesan and a few pieces of mint. Repeat for the rest of the servings and enjoy! Cook’s Note: This dish is great with a special olive oil finish! Serves: 4
