Arielle Haspel shows you how to make an unbelievably delicious clean eating Mac and Cheese recipe. It's your favorite comfort food gone healthy!
Today Arielle Haspel shows you how to make an unbelievably delicious clean eating version of Mac and Cheese. Decadent and creamy yet still light, it's your favorite comfort food gone healthy!
Arielle uses brown rice pasta, which tastes just like regular pasta but is much healthier. Brown rice pasta is full of fiber, so you can enjoy the taste and texture of traditional pasta without feeling heavy and weighed down. Cook the brown rice pasta according to the directions on the box and set aside while you work on the cheesy sauce.
Instead of heavy butter and milk, you'll be using a much lighter alternative- almond milk. Make sure that you buy unsweetened almond milk so that your Mac and Cheese doesn't taste sweet!
Next comes the most important ingredient- the cheese! It's possible to eat clean as long as you choose the right dairy products. Arielle recommends using grass-fed organic cheddar cheese for a creamy, gooey texture. You will also add some coconut oil to help the creamy sauce come together, as well as a bit of sea salt.
Add the almond milk, coconut oil and cheese to a sauce pan over medium-low heat. Let this cook down, while stirring occasionally, until it becomes a thick and creamy cheese sauce.
When the cheese sauce is ready, pour it over the cooked brown rice pasta and stir to coat all the pasta with cheese. You can serve it like this, or take it up a notch if you want a fancier casserole dish to serve at dinner.
All you have to do is pour the Mac and Cheese into a baking pan and add some spinach, which will give you added fiber and nutrients. Then you'll sprinkle almond flour on top which will give it a nice crust when you bake it. Now you can put it into the oven on broil for about 5 minutes, until it gets crispy on top.
This is a super easy meal your whole family will love! There's no need to make boxed macaroni and cheese when you can make a guilt-free clean eating version all by yourself!
- 2 cups brown rice pasta, cooked
- 4 tsp coconut oil
- 1 cup almond milk, unsweetened
- 1 cup organic cheddar cheese
- ½ tsp sea salt
- ¼ cup frozen spinach
- 1 cup almond flour
- Black pepper to taste
Cook brown rice macaroni according to instructions on the box. Preheat oven to Broil (high). In medium sauce pan, heat on medium-low coconut oil, almond milk and cheese until cheese is just about to melt (save some cheese for later). Add cooked macaroni to the saucepan with the cheese mixture and stir to coat macaroni thoroughly. Add ½ teaspoon sea salt. Once all macaroni is coated, add it to an 8 x 10 baking dish. Sprinkle rest of cheese, frozen spinach and then almond meal and sea salt and pepper on top. Put in oven and broil on high for 5 min until brown and crispy.

00:00:00.000 --> 00:00:02.504
00:00:02.504 --> 00:00:04.210
You're not gonna believe this recipe.
00:00:04.210 --> 00:00:07.980
It's a cleaner version of mac & cheese,
00:00:07.980 --> 00:00:11.420
decadent, creamy, and so delicious.
00:00:11.420 --> 00:00:12.503
00:00:12.503 --> 00:00:15.125
00:00:15.125 --> 00:00:20.195
So here we're using brown rice pasta,
which tastes exactly like regular pasta.
00:00:20.195 --> 00:00:23.335
Or at least, I think it tastes
exactly like regular pasta.
00:00:23.335 --> 00:00:24.405
And it's full of fiber, so
00:00:24.405 --> 00:00:27.065
it's not going to give you that
like weighing down feeling.
00:00:27.065 --> 00:00:30.405
You're still going to feel light
without compromising taste.
00:00:30.405 --> 00:00:33.995
Then instead of butter and milk, we're
actually going to be using almond milk,
00:00:33.995 --> 00:00:36.675
but just make sure that
you use unsweetened.
00:00:36.675 --> 00:00:38.069
You don't want sweetness in your mac and
00:00:40.190 --> 00:00:42.580
Then we're going to use
cheese because mac and
00:00:42.580 --> 00:00:47.620
cheese I believe can be clean,
but you can still use cheese.
00:00:47.620 --> 00:00:50.920
So what I recommend is grass-fed
organic cheddar cheese.
00:00:50.920 --> 00:00:53.670
You can use white, you can use yellow,
whatever you want.
00:00:53.670 --> 00:00:58.510
A little bit of cheese to give it that
texture, creaminess, and gooiness.
00:00:58.510 --> 00:01:02.635
And then we're gonna be using coconut oil
as well to help get it all together and
00:01:02.635 --> 00:01:04.336
help with that creamy texture.
00:01:04.336 --> 00:01:05.960
And then of course,
we're always gonna use sea salt.
00:01:05.960 --> 00:01:08.280
All right, so let's cook this all up.
00:01:08.280 --> 00:01:10.863
So here we're gonna add some almond milk,
00:01:10.863 --> 00:01:15.837
we're gonna add some of the coconut oil,
and we're gonna add some of the cheese.
00:01:15.837 --> 00:01:19.671
And we're just gonna cook this all down
until it's a thick and creamy sauce.
00:01:19.671 --> 00:01:22.921
00:01:22.921 --> 00:01:27.879
And just stir it occasionally, so it
becomes cheesy all throughout the mixture.
00:01:27.879 --> 00:01:33.671
00:01:33.671 --> 00:01:36.640
How perfect does this mixture look?
00:01:36.640 --> 00:01:38.810
No need to use boxed macaroni and cheese.
00:01:38.810 --> 00:01:41.560
You can make it yourself,
and look how fast that was.
00:01:41.560 --> 00:01:47.252
In a few minutes,
you can have delicious mac and cheese.
00:01:47.252 --> 00:01:51.060
So again, if you want to just eat it
as is, you can serve it up like this.
00:01:51.060 --> 00:01:54.460
Or if you want to go fancy schmancy and
serve it at a dinner party or for
00:01:54.460 --> 00:01:57.080
a delicious dinner,
then you can bake it into a casserole.
00:01:58.120 --> 00:02:02.139
So just pour it all into a pan, and
00:02:02.139 --> 00:02:07.463
then we're going to add
some spinach to it.
00:02:07.463 --> 00:02:12.050
The spinach adds tons of fiber, tons of
nutrients, you can eat this guilt free.
00:02:12.050 --> 00:02:15.860
And then we're going to add
some almond flour on top.
00:02:15.860 --> 00:02:19.977
Typically if you're baking your mac and
cheese, typically people use flour,
00:02:19.977 --> 00:02:23.796
but today we're going to be using
almond meal which is ground up almonds.
00:02:23.796 --> 00:02:27.449
They also call it almond
flour at the supermarket, so
00:02:27.449 --> 00:02:32.171
we're just gonna sprinkle some on
top to give it that perfect crust.
00:02:32.171 --> 00:02:34.712
00:02:34.712 --> 00:02:37.587
All right, and we are ready to bake.
00:02:37.587 --> 00:02:40.836
00:02:40.836 --> 00:02:44.800
[SOUND] Your family is going
to flip over this recipe.
00:02:44.800 --> 00:02:46.360
How amazing does this mac and cheese look?
00:02:48.470 --> 00:02:50.250
Simple and comforting.
00:02:50.250 --> 00:02:53.800
It was just in the oven for about five
minutes until it was crispy on top.
00:02:57.120 --> 00:02:59.630
Oh baby, this looks good.
00:02:59.630 --> 00:03:08.045
00:03:08.045 --> 00:03:10.421
00:03:10.421 --> 00:03:12.970
Classic tasting mac and cheese.
00:03:12.970 --> 00:03:16.148
Creamy, thick, but without the guilt, and
00:03:16.148 --> 00:03:19.421
made with all ingredients
you can pronounce.
00:03:19.421 --> 00:03:21.600
I call this a total score.
00:03:21.600 --> 00:03:24.003
I'm Arielle Haspel, and
thank you for watching.
