Today Arielle Haspel shows you how to make an unbelievably delicious clean eating version of Mac and Cheese. Decadent and creamy yet still light, it’s your favorite comfort food gone healthy! 

Arielle uses brown rice pasta, which tastes just like regular pasta but is much healthier. Brown rice pasta is full of fiber, so you can enjoy the taste and texture of traditional pasta without feeling heavy and weighed down. Cook the brown rice pasta according to the directions on the box and set aside while you work on the cheesy sauce. 

Instead of heavy butter and milk, you’ll be using a much lighter alternative- almond milk. Make sure that you buy unsweetened almond milk so that your Mac and Cheese doesn’t taste sweet!  

Next comes the most important ingredient- the cheese! It’s possible to eat clean as long as you choose the right dairy products. Arielle recommends using grass-fed organic cheddar cheese for a creamy, gooey texture. You will also add some coconut oil to help the creamy sauce come together, as well as a bit of sea salt. 

Add the almond milk, coconut oil and cheese to a sauce pan over medium-low heat. Let this cook down, while stirring occasionally, until it becomes a thick and creamy cheese sauce. 

When the cheese sauce is ready, pour it over the cooked brown rice pasta and stir to coat all the pasta with cheese. You can serve it like this, or take it up a notch if you want a fancier casserole dish to serve at dinner. 

All you have to do is pour the Mac and Cheese into a baking pan and add some spinach, which will give you added fiber and nutrients. Then you’ll sprinkle almond flour on top which will give it a nice crust when you bake it. Now you can put it into the oven on broil for about 5 minutes, until it gets crispy on top. 

This is a super easy meal your whole family will love! There’s no need to make boxed macaroni and cheese when you can make a guilt-free clean eating version all by yourself!

 

  • 2 cups brown rice pasta, cooked
  • 4 tsp coconut oil
  • 1 cup almond milk, unsweetened
  • 1 cup organic cheddar cheese
  • ½ tsp sea salt
  • ¼ cup frozen spinach
  • 1 cup almond flour
  • Black pepper to taste
Cook brown rice macaroni according to instructions on the box. Preheat oven to Broil (high). In medium sauce pan, heat on medium-low coconut oil, almond milk and cheese until cheese is just about to melt (save some cheese for later). Add cooked macaroni to the saucepan with the cheese mixture and stir to coat macaroni thoroughly. Add ½ teaspoon sea salt. Once all macaroni is coated, add it to an 8 x 10 baking dish. Sprinkle rest of cheese, frozen spinach and then almond meal and sea salt and pepper on top. Put in oven and broil on high for 5 min until brown and crispy.
