- 1 egg beaten
- 1 ½ tablespoons coconut butter
- 1 ⅓ cup almond flour
- ½ teaspoon vanilla extract
- 2 eye droppers full of stevia (or 2 teaspoons honey)
- ¾ teaspoon baking soda
- 1 teaspoon sea salt
- ½ cup raisins
- ½ teaspoon cinnamon
- 1 handful coconut flakes (to put on top of cookies)
InstructionsPreheat oven to 350 degrees Fahrenheit. Have a greased cookie sheet ready. Blend egg and coconut butter in small bowl. Add vanilla extract and stevia to the mix. In another bowl, combine almond flour, cinnamon, baking soda, and salt. Combine dry ingredients with wet ingredients. Add raisins. Grease a 9 x 13 pan and spread cookie mixture on top (you may have to wet your fingertips to spread it out.) Sprinkle coconut flakes on top. Bake for 10 minutes or until done. Cool on rack. Serves 5
