Diabetes Bites: Heavenly Deviled Eggs
These eggs make a delicious diabetes-friendly snack.

Welcome to Diabetes Bites here on HealthiNation! Join Fiorella DiCarlo, a registered dietitian, as she instructs you on how to make delicious meals that allow you to manage and watch out for diabetes!
Today Fiorella will teach you how to make a crowd favorite, deviled eggs. Eggs are filled with protein, which is great in snacks because protein keeps you full and satisfied. In a diabetic diet, protein is the best tool you can use in order to lower and stabilize your blood sugar. Plus, the yolk contains lots of vitamins and minerals. So with all of these healthy benefits in mind, let's get cooking!
First, peel your boiled eggs. Once they're all peeled, halve them. Then, scoop out the egg yolks, place them in a bowl, and smash them up lightly.
Next, add light mayonnaise to the yolks. Using a light mayonnaise will help lower the fat content of the overall recipe. Sprinkle in the ground mustard and the salt. Add salt and pepper to taste. Mix it all in.
Scoop up the paste and begin filling your eggs. Garnish with chives and paprika.
These are great to serve at dinner parties, picnics, or even to make as a light snack! Enjoy this low-fat, healthified version of your favorite deviled eggs!
Ingredients
- 6 large eggs
- 2 tbsp, plus 1 tsp light mayonnaise
- 1/8 tsp dry mustard
- Pinch of salt
- Freshly ground black pepper
Instructions
1. Place the eggs in a small saucepan so that they won’t bounce or move around and crack. Cover with water. Bring to a boil. Immediately turn off and cover. Let sit for 15-18 minutes to continue cooking. Pour out the hot water. Shake the eggs in the pan to crack the shells. Add cold water and let sit. (This will make them easier to peel.) 2. Peel the eggs and cut them in half vertically. Remove yolks, place them in a small bowl, and mash with a fork. Add mayo, mustard, salt and pepper. 3. Fill egg whites with mixture. Garnish with sliced grape tomatoes, sliced olives, sliced radishes, sliced scallions, or a drop of caviar or truffle paste. (Garnishes are optional.)Nutrition Information

00:00:01,490 --> 00:00:05,560
Do you know what to do when
you're feeling a little devilish?
2
00:00:05,560 --> 00:00:07,176
Make deviled eggs!
3
00:00:07,176 --> 00:00:09,110
And, I'm going to show you
how to make them healthy too.
4
00:00:09,110 --> 00:00:14,580
I know that eggs get a bad rep because of
5
00:00:14,580 --> 00:00:18,610
the cholesterol but recently, they found
that it's not so much the cholesterol in
6
00:00:18,610 --> 00:00:22,750
the egg that you have to worry about, but
it is saturated fat in your diet instead.
7
00:00:22,750 --> 00:00:26,460
The best part of the egg is that
it's filled with protein, and
8
00:00:26,460 --> 00:00:31,390
for a diabetic diet, it is the best
tool you can have to lowering and
9
00:00:31,390 --> 00:00:33,290
stabilizing your blood sugar levels.
10
00:00:33,290 --> 00:00:37,670
It is pure protein in the egg, and
it has all the 11 essential amino acids,
11
00:00:37,670 --> 00:00:41,792
it will keep you fuller longer, and
it will boost your metabolism too.
12
00:00:41,792 --> 00:00:47,307
We've boiled our eggs,
[SOUND] cracked this guy and peel it.
13
00:00:47,307 --> 00:00:52,640
We're going to go take our egg and
halve it.
14
00:00:52,640 --> 00:00:58,148
All right there we are, and we have this
beautiful rich yellow yolk inside and
15
00:00:58,148 --> 00:01:01,719
we're going to put our
yolks right into the bowl.
16
00:01:01,719 --> 00:01:03,189
They're a little slippery,
17
00:01:03,189 --> 00:01:07,027
these suckers, so hold on to them before
they just go flying out of your hand.
18
00:01:07,027 --> 00:01:11,280
We're gonna keep those there, and
we can start smashing these, right?
19
00:01:11,280 --> 00:01:14,161
A little bit there, right before
we grab our other ingredients.
20
00:01:14,161 --> 00:01:16,550
We're using a light mayo.
21
00:01:16,550 --> 00:01:19,882
So that's going to help with the fat
content of the entire recipe,
22
00:01:19,882 --> 00:01:21,800
which will be lower, which is great.
23
00:01:21,800 --> 00:01:23,620
And we're gonna add this in.
24
00:01:23,620 --> 00:01:29,860
And we also have some ground mustard to
give it a little spicy kick, there we are.
25
00:01:31,090 --> 00:01:33,000
And a little pinch of salt.
26
00:01:33,000 --> 00:01:37,730
Remember, the key here is you make
the recipe, okay, so taste as you go.
27
00:01:37,730 --> 00:01:40,740
If you feel like it needs a little bit
more salt or a little bit more pepper,
28
00:01:40,740 --> 00:01:43,680
go ahead even if the recipe
doesn't say to do so.
29
00:01:43,680 --> 00:01:48,169
We're gonna go ahead and start smashing
that, we're gonna ground some pepper
30
00:01:48,169 --> 00:01:51,598
in there in one second,
just let me get this nice and smashy.
31
00:01:51,598 --> 00:01:56,314
There we are, there's that, and
I'm gonna grate just a little there.
32
00:01:56,314 --> 00:01:57,018
There we go again.
33
00:01:57,018 --> 00:01:58,970
Taste it, see if you like it,
34
00:01:58,970 --> 00:02:03,360
add a little more if you feel like
you want more of a spicy kick to it.
35
00:02:03,360 --> 00:02:04,940
There we go, I think this is a good paste.
36
00:02:04,940 --> 00:02:06,170
Doesn't have to be perfect,
37
00:02:06,170 --> 00:02:08,870
if it's a little chunky it's fine,
don't worry about it.
38
00:02:08,870 --> 00:02:13,114
So I'm gonna go ahead, and take a spoon,
and start to fill my eggs there.
39
00:02:13,114 --> 00:02:15,877
There we are, nice and
chunky, it looks pretty.
40
00:02:15,877 --> 00:02:17,110
There we are.
41
00:02:17,110 --> 00:02:19,650
And remember,
the reason why the yolk is so
42
00:02:19,650 --> 00:02:23,360
important is because all the vitamins
in the egg is in the yolk.
43
00:02:23,360 --> 00:02:27,820
So for all you egg white omeletters,
keep the yolk in.
44
00:02:27,820 --> 00:02:31,506
All right there we go,
we're gonna fill this guy in there,
45
00:02:31,506 --> 00:02:33,285
look how pretty that looks.
46
00:02:33,285 --> 00:02:36,720
All right, that's perfect.
47
00:02:36,720 --> 00:02:40,016
There we go, nice and
fluffy little pillows of filling.
48
00:02:40,016 --> 00:02:43,643
All right, so now we're gonna garnish
it to make it even more pretty.
49
00:02:43,643 --> 00:02:45,707
And we have some chives here,
50
00:02:45,707 --> 00:02:49,680
you can also sprinkle a little
paprika over it, as well.
51
00:02:49,680 --> 00:02:50,385
And there we are.
52
00:02:50,385 --> 00:02:51,281
Look at that!
53
00:02:51,281 --> 00:02:56,379
It gives it a little color,
a little pop of color.
54
00:02:56,379 --> 00:02:57,307
There we are.
55
00:02:57,307 --> 00:02:59,250
Wait, there you go.
56
00:02:59,250 --> 00:03:03,060
So the next time you're feeling devilish,
make some deviled eggs.
57
00:03:03,060 --> 00:03:04,503
They're beautiful.

00:03:07,132 --> 00:03:11,058
