Fresh Mint Hot Chocolate

In this video of clean eating Arielle Haspel shows you how to make the perfect indulgent treat when you’re craving something sweet – fresh mint hot chocolate.  It’s perfect for those days when you want to cuddle on your couch and eat everything in sight, but don’t want to feel guilty afterwards.  This will leave you feeling guilt free after drinking it!  Start with a cup of almond milk, or coconut milk if you want it a little creamier and thicker.  Place the milk in a pot on low to medium heat to reach a very low boil. 

When Arielle talks about clean eating, it’s not about depriving yourself of all sugars.  Try adding some coconut palm sugar instead of white sugar.  Next add the raw cacao powder.  This is actually from the cacao bean, which has no sugar in it.  Then add some fresh mint. 

Now you have an indulgent, cozy treat that’s also fresh! 

 

  • 1 cup almond milk (or coconut milk)
  • 5 mint leaves (¼ tsp mint extract)
  • 1 tbsp. raw cacao powder, unsweetened
  • 1 tbsp. coconut palm sugar
Heat almond milk in a small sauce pan on low to medium heat until light, light boil. Add coconut palm sugar, cacao powder, mint leaves, and stir until combined. Makes 1 serving
