Phoebe Lapine shows you a perfect bellini recipe, a Fresh Strawberry Bellini with some fresh grilled strawberries and a hint of mint.
Phoebe Lapine shows you how to make one of her favorite brunch cocktails, the Bellini. She does a nice summer spin on it with some grilled strawberries. This fresh strawberry Bellini recipe will be a winner at your next summer evening party. First you’re going to take your strawberries and skewer them up. Before you do this make sure you soak the skewers for about 20 minutes! This is really important because they will probably light up on fire if they go straight to the grill otherwise. Feel free to keep or take off the leaves on the strawberries, to your preference. Have two strawberries for each skewer so they fit in the glass later when you serve.
Grease your grill lightly with olive oil and when it gets hot you can place your skewers with the strawberries right on top. You want to make sure you keep on there for long enough to form some char so this will be around a minute or so on each side. You’ll then end up with the smokiness of the grill but also the freshness of the fruit that’ll make it super juicy.
Once the strawberries are all charred up and ready to for your cocktail, you can go ahead and add some cut up mint leaves into the glass before serving so you get the a nice summery fresh drink in the end. Place one skewer in each glass and finally pour in the Prosecco, which will mix really well with the juicy strawberry and the minty leaves. This delicious and refreshing bellini recipe will make a great drink for a summer night.

00:00:00.050 --> 00:00:04.290
Hi, I'm Phoebe Lapine, and
00:00:04.290 --> 00:00:06.760
you're watching HealthiNation's
guide to summer.
00:00:06.760 --> 00:00:10.750
00:00:10.750 --> 00:00:14.231
So today, I'm gonna show you how to make
one of my favorite brunch cocktails,
00:00:14.231 --> 00:00:14.880
00:00:14.880 --> 00:00:18.120
But we're gonna do a nice summer spin
on it with some grilled strawberries.
00:00:18.120 --> 00:00:22.070
First, I'm going to take my
strawberries and skewer them up.
00:00:22.070 --> 00:00:26.453
I soak these skewers for twenty minutes,
and that's really important because if
00:00:26.453 --> 00:00:30.211
you don't do that, they will most
likely light on fire on your grill.
00:00:30.211 --> 00:00:32.192
And that's not the kind
of kindling you want.
00:00:32.192 --> 00:00:34.361
I like to leave the tops
on the strawberries.
00:00:34.361 --> 00:00:37.197
I think it looks really rustic and
beautiful, but if you don't like that,
00:00:37.197 --> 00:00:37.970
you can take it off.
00:00:37.970 --> 00:00:41.226
And then just string
them through the top and
00:00:41.226 --> 00:00:45.370
out the other end to make
a really nice little skewer.
00:00:45.370 --> 00:00:48.782
So I'm just gonna take these over to the
grill and get them nice and charred and
00:00:48.782 --> 00:00:49.841
juicy for my cocktail.
00:00:49.841 --> 00:00:54.435
I'm gonna get my strawberry
skewers onto the hot grill which I
00:00:54.435 --> 00:00:57.420
greased lightly with olive oil.
00:00:57.420 --> 00:01:01.230
We're just gonna grill them for
about a minute or so on each side.
00:01:01.230 --> 00:01:03.552
You wanna make sure to leave it on for
long enough for
00:01:03.552 --> 00:01:05.391
them to actually form some sort of char.
00:01:05.391 --> 00:01:07.683
We're gonna get the smokiness
of the grill but
00:01:07.683 --> 00:01:10.920
also the benefit of cooked fruit
which makes it super juicy.
00:01:10.920 --> 00:01:13.743
All those juices are gonna leak
out into the Prosecco, and
00:01:13.743 --> 00:01:16.862
it's gonna look like rose but
kind of taste like strawberries.
00:01:16.862 --> 00:01:18.421
Let's get them out of here.
00:01:18.421 --> 00:01:24.546
Cool, beautiful color on those,
love it, beautiful.
00:01:24.546 --> 00:01:29.380
All right, so these are nice and
cooked and charred by the grill,
00:01:29.380 --> 00:01:32.580
so they're gonna be super juicy
when I put them into my cocktail.
00:01:32.580 --> 00:01:35.550
I love adding fresh
herbs to summer recipes.
00:01:35.550 --> 00:01:39.523
So we're just gonna take a couple mint
leaves, and you can just tear them,
00:01:39.523 --> 00:01:43.640
which bruises them a little bit and
releases all those great flavorful oils.
00:01:43.640 --> 00:01:46.430
Just put a little bit in
the bottom of each glass,
00:01:46.430 --> 00:01:48.550
which will also look really pretty.
00:01:50.140 --> 00:01:54.941
And then just put one skewer in each.
00:01:54.941 --> 00:01:59.216
And you can see they are already
starting to release their juices,
00:01:59.216 --> 00:02:03.663
which will mix with the Prosecco and
become kind of like a rose color.
00:02:03.663 --> 00:02:06.520
All right, and now for the Prosecco.
00:02:06.520 --> 00:02:08.821
So if you're super fancy,
you can use champagne.
00:02:08.821 --> 00:02:12.471
But the nice thing that about the way that
the Italians do a classic Bellini is that
00:02:12.471 --> 00:02:15.961
they use Prosecco, which is affordable
compared to very fancy champagne and
00:02:15.961 --> 00:02:17.160
also tastes great.
00:02:17.160 --> 00:02:21.150
So hopefully, I won't smash
myself in the face with the cork,
00:02:21.150 --> 00:02:23.918
and then just give it a gentle twist.
00:02:23.918 --> 00:02:28.309
[SOUND] Beautiful, always feels so fun.
00:02:28.309 --> 00:02:33.030
And then just top off your cocktail.
00:02:33.030 --> 00:02:38.940
Always tilt the glass if you don't
want too much foam, beautiful.
00:02:38.940 --> 00:02:42.720
These are our grilled strawberry and
00:02:42.720 --> 00:02:45.160
You can kinda muddle
the strawberries along.
00:02:45.160 --> 00:02:48.980
People can pop off the skewer, or
just tilt to the side and sip.
00:02:52.060 --> 00:02:56.608
Mm, really refreshing and summery.
00:02:56.608 --> 00:02:57.589
