This easy beef stew recipe is a classic slow-cooked dish with garlic, onions, chili and of course beef. 

In this episode of Sam Tan’s Kitchen, Sam demonstrates how to make rich tomato beef stew. Make sure you use stewing or braising meat. All you’ll need to get started is olive oil, onions and garlic, dry chilies, bay leaves, chopped tomatoes, salt and pepper. Simmer on low to medium heat for two hours and you’re all done. It’s cheap, simple and delicious.

 

  • 1 onion (sliced into half rings)
  • 2 cloves of garlic (minced)
  • 1 pound stewing/braising beef (cut into chunks)
  • 2 bay leaves
  • 2 dried chillis (crushed)
  • 1 large carrot (cut into chunks)
  • 1 can (14 ounces) chopped tomatoes
  • 1 cup water
  • Splash of milk
  • 1 teaspoon wholegrain mustard
  • 1 cup couscous
  • Salt and black pepper
  • Generous sprinkling of dried mixed herbs
  • 1 tbsp unsalted butter
Cook onion and garlic in a pan over low-medium heat until translucent. Add beef, bay leaves, herbs, chilies, salt/pepper and stir for a few minutes until meat is browned. Stir in carrot, can of tomatoes, water, milk, cover and simmer on low heat for 2 hours until thickened. At the last minute, stir in 1 teaspoon of wholegrain mustard and cook a couple more minutes. Serve hot with rice, couscous or bread. Serves 2-3
