In this episode of Sam Tan’s Kitchen, Sam demonstrates how to make buttery couscous. While you can add anything you want to your couscous to spice it up, Sam loves throwing in dried fruit. Add boiled water and wait three minutes. Then add some butter and you’re ready to go. This side dish is cheap, simple and delicious.
- 2 cloves of garlic (minced)
- 2 bay leaves
- 1 large carrot (cut into chunks)
- 1 cup water
- 1 teaspoon wholegrain mustard
- Salt and black pepper
- 1 tbsp unsalted butter
- 1 onion (sliced into half rings)
- 1 pound stewing/braising beef (cut into chunks)
- 2 dried chillies (crushed)
- 1 can (14 ounces) chopped tomatoes
- A splash of milk
- 1 cup couscous
- Generous sprinkling of dried mixed herbs
Cook onion and garlic in a pan over low-medium heat until translucent. Add beef, bay leaves, herbs, chillies, salt/pepper and stir for a few minutes until meat is browned: Stir in carrot, can of tomatoes, water, milk, cover and simmer on low heat for 2 hours until thickened: At the last minute, stir in 1 teaspoon of wholegrain mustard and cook a couple more minutes. Serve hot with rice, couscous or bread. Serves 2-3
