Avocado Sushi

In this episode of Eating by Heart, Colombe shows how easy and fun it can be to make your own sushi using just 6 ingredients. Be sure to use sushi rice (as opposed to regular rice) so your sushi rolls stick together nicely.

Ingredients
- 5 tablespoons mirin (rice wine vinegar)
- 4 ½ sheets of nori (edible seaweed)
- ½ of a cucumber (cut lengthwise)
- 2 cups of Japanese short grain rice (or sushi rice)
- 2 tablespoons maple syrup
- ⅛ of an avocado
Instructions
Cook rice (according to package) When the rice is cooked add the 5 tablespoons of rice vinegar + maple syrup mixture and cover. Set aside sheets of nori On the full sheet of nori, spread ¼ of the white rice leaving about 1 inch at the top of the nori sheet. Place avocado and cucumber (or any other fillings at the bottom of the sheet and roll pressing firmly as you go. Brush water at the top of the sheet to seal the edges. Mix different fillings of your choice to try different flavor combos! Serves 4-5

- 00:02 Sushi is a fun, easy to make, light, healthy meal for a snack, for
- 00:07 a main course.
- 00:08 And I'm gonna show you how to make it.
- 00:10 [MUSIC]
- 00:13 First things first.
- 00:14 We're gonna get our sushi rice ready.
- 00:16 So I've pre-cooked the sushi rice, and now I'm going to add some maple syrup and
- 00:21 some miran, which is also rice wine vinegar.
- 00:24 And I'm going to mix that together, and this is what gives sushi rice a sweet
- 00:28 flavor and seasons it a little bit more than just using plain rice.
- 00:32 I'm going to go ahead and pour that into my sushi rice and mix it.
- 00:36 And notice, we're using maple syrup instead of sugar.
- 00:41 Natural sweetener.
- 00:42 It's got nutrients like calcium and other minerals.
- 00:46 So I'm using sushi rice because it sticks together and holds in the roll better.
- 00:50 If I had used just plain old rice,
- 00:52 it wouldn't hold together like sushi rice does.
- 00:55 And here's my nori.
- 00:56 Now, nori has a surprising amount of nutrients in it, nori is seaweed.
- 01:01 And it's got iodine.
- 01:02 It's got B minerals.
- 01:03 It's got zinc.
- 01:04 It's got protein, even.
- 01:05 It's good for thyroid function, so it helps maintain a healthy weight.
- 01:08 So I'm gonna place my nori down on the mat, going with the grain so
- 01:12 that it rolls really easily.
- 01:14 Now I'm just gonna get my avocado ready.
- 01:15 So I have a really fun trick for avocado.
- 01:19 Avocado is an anti-inflammatory food.
- 01:21 It's really healthy for you as well.
- 01:23 It's a healthy fat.
- 01:24 So I'm going to go and cut that in half.
- 01:25 And this is a beautifully ripe avocado.
- 01:29 So it's not too mushy, it's just firm and sweet and ripe.
- 01:33 Slice.
- 01:34 Small strips.
- 01:35 And I'm gonna turn it over onto the plate and
- 01:37 I'm just gonna start peeling off the skin.
- 01:40 And this keeps it really neat and tidy.
- 01:42 The skin just peels off beautifully.
- 01:43 And then I've got my beautiful avocado and I can just kinda press it down.
- 01:48 Wait till you see how easy this is.
- 01:50 Just gonna take some rice.
- 01:52 I want to cover the nori square so that I leave about an inch and a half at the top.
- 01:56 That's where we'll seal the roll.
- 01:57 And you want a thin layer of the rice over top.
- 02:02 And now we're ready for our fillings.
- 02:04 So, you can mix and match all your favorite fillings.
- 02:06 I like to use avocado and cucumber as my base, you can use fish,
- 02:10 you can use shrimp, you can use all sorts of stuff.
- 02:13 So now I'm gonna lay my avocado across the nori and
- 02:19 rice, a few strips of cucumber.
- 02:23 And you don't want to overstuff it.
- 02:24 You want your rolls to be nice and
- 02:26 tight, and I'm going to go ahead and flip it over.
- 02:29 Tuck your fillings in.
- 02:30 And then as you go, you kind of squeeze it as you go so it gets nice and firm.
- 02:34 Now, if you don't have a sushi mat, you can use parchment paper instead.
- 02:37 [MUSIC]
- 02:43 And then when you get to the end, you give it a nice press.
- 02:46 It looks perfect here.
- 02:47 A nice little bundle.
- 02:50 And now we can cut.
- 02:51 So I always like to wet my knife, and
- 02:53 then, in between, you just wipe you knife with a wet rag.
- 02:58 That gives you a nice clean cut.
- 03:03 Like a sushi master.
- 03:06 And there you go.
- 03:07 Beautiful. I like to
- 03:07 serve this with some pickled ginger and some soy sauce.
- 03:10 I'm gonna have a little bite.
- 03:13 I highly recommend this.
- 03:15 I love that you can mix and match all different kinds of fillings too.
