In this episode of Eating by Heart, Colombe makes a French fry recipe that is truly guilt-free. Requiring only three ingredients to make, these sweet potato fries are rich in fiber, vitamin C, and iron. Colombe also demonstrates how to cut sweet potatoes to get them crispy on the outside and soft on the inside - which needs to fry?
Ingredients
- 2 Sweet Potatoes
- ¼ cup coconut oil
- ¼ teaspoon salt
Instructions
Preheat oven to 450 degrees Fahrenheit. Peel the sweet potatoes. If the potatoes are large, cut them in half and then thinly slice on a diagonal. Otherwise make 1 inch size pieces. Pour coconut oil over the potatoes. Sprinkle with salt and place on a baking sheet, being careful not to crowd the pan. Bake for 15 minutes undisturbed or until crispy on the outside and cooked through. Serves 2
