Chocolate chip cookies don’t have to be only for your cheat days. We have a chocolate chip cookie recipe that’s equally rewarding for your health as well as flavor. Try this recipe for scrumptious gluten free chocolate chip cookies. 

First, start with wet ingredients. This recipe uses unsalted butter, sugar, brown sugar, a quarter cup of molasses, one egg, and a teaspoon of vanilla extract. When you bake gluten free, the dry ingredients you include are very important. These gluten free chocolate chip cookies use a mixture of rice flour, almond flour and coconut flour, baking soda, salt and cinnamon. Once both wet and dry mixtures are prepared, add dry mix a little bit at a time to the wet mixture. Then, add twelve ounces of delicious semi-sweet chocolate chips. Once all ingredients are combined, place cookies about one inch apart on baking sheet. When baking sheet are full, place in oven for about 12 minutes. Once done, place on wire rack to cool and voila! These easy gluten free chocolate chips cookies are a delicious sweet treat!

Ingredients
  • 1 ½ sticks unsalted butter, room temperature
  • ½ cup granulated sugar
  • 12 oz chocolate chips
  • 1 ½ cup brown rice flour
  • 1 cup almond flour
  • ¼ tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup light brown sugar, packed
  • ¼ cup molasses
  • 1 large egg, room temperature
  • ½ cup coconut flour
  • 1 tsp. baking soda
  • ½ tsp. cinnamon
Method
Preheat oven to 350 degrees. In a mixer, cream butter, sugar and molasses about 8 minutes or until light and fluffy. Scraping down the sides of the bowl as needed, add the egg then vanilla, until combined. In a separate bowl, whisk together the dry ingredients, expect for the chocolate chips. While the mixer is on low, gradually add the dry mixture into the wet ingredients. Once they are combined, stir in the chocolate chips. Line your baking sheets with parchment paper. Scoop 1 tablespoon of cookie dough onto the parchment paper, spacing the dough 1 inch apart. Bake for 12 minutes. Let the cookies rest for 5 minutes before transferring to a wire rack. Makes about 45 cookies
