Coconut Raisin Cookies Recipe.

- 1 egg beaten
- 1 ⅓ cup almond flour
- 2 eye droppers full of stevia (or 2 teaspoons honey)
- 1 teaspoon sea salt
- ½ teaspoon cinnamon
- 1 ½ tablespoons coconut butter
- ½ teaspoon vanilla extract
- ¾ teaspoon baking soda
- ½ cup raisins
- 1 handful coconut flakes (to put on top of cookies)
Preheat oven to 350 degrees Fahrenheit. Have a greased cookie sheet ready. Blend egg and coconut butter in small bowl. Add vanilla extract and stevia to the mix. In another bowl, combine almond flour, cinnamon, baking soda, and salt. Combine dry ingredients with wet ingredients. Add raisins. Grease a 9 x 13 pan and spread cookie mixture on top (you may have to wet your fingertips to spread it out.) Sprinkle coconut flakes on top. Bake for 10 minutes or until done. Cool on rack. Serves 5
