Tahini Cookies

This cookie recipe uses tahini which is sesame seed butter which can be purchased at a health food store or be made from scratch at home.

Tahini is rich in many nutritious minerals and is one of the top sources of calcium. Tahini has multiple uses but for this we use it as a base to make some amazingly healthy cookies.

In this episode of Gluten Free Tasty, Jenné shows you how to make a simple cookie recipe using one of her favorite ingredients. Tahini (ground sesame seeds) is high in calcium, magnesium, potassium, protein, and iron. You'll only need one bowl to assemble all the ingredients and they will be ready to eat in ten minutes.

 

 

Ingredients
  • ½ cup tahini
  • 2 teaspoons cinnamon
  • 2 tablespoons chocolate chips
  • ½ cup chopped walnuts
  • ¼ cup maple syrup
  • ¾ cup quick cooking oats
  • 2 tablespoons shredded raw sweet potato
  • 1 pinch of sea salt
Method
Preheat your oven to 350 degrees Fahrenheit. Mix the tahini, maple syrup and cinnamon well, then add the remaining ingredients. Stir well to combine. Dampen your hands, and scoop 2 or 3 tablespoons into your palm to form into a cookie shape. Place onto a parchment lined baking sheet. Repeat with remaining batter. Bake for 10 minutes. Allow to cool for 10 minutes before enjoying. Serves 8
