Guacamole & Homemade Chips

In this episode of Eating by Heart, host Colombe shares her recipe for healthy guacamole and homemade chips. This guilt free recipe uses less oil for the chips and jalapeno pepper for an extra kick in the guacamole. Guacamole is composed primarily of avocados which pose numerous health benefits. Avocados are packed with healthy fats and loaded with vitamin E, guacamole is also great for your digestive system since it contains both fiber and niacin! If your diet needs a jump start then guacamole should be your go to garnish and dip when needed.

 

Ingredients
  • 1 avocado
  • ¼ cup diced onion
  • 1 tbsp cilantro
  • olive oil
  • ¼ cup diced tomato
  • 1 tbsp diced jalapenos
  • 4-5 brown rice tortillas
  • sea salt
Method
Preheat oven to 350 degrees. Cut brown rice tortilla in half and then into small triangles. Place on a baking tray and drizzle with olive oil. Sprinkle with a pinch of sea salt and bake for 7 minutes or until crispy. Rough chop the avocado and place in a larger bowl. Mash slightly. Fold in the tomato, diced onion, jalapenos and cilantro. Continue to mash to desired consistency using the pestle. Serves 2-4
