Today, Arielle shows you a new delicious, healthy pesto with a secret ingredient. Kale! You can use any type of kale in this recipe – the dinosaur lacinato kale, the curly kind or even purple kale.  First, hold the stem of the kale, pull the leaves off and add them to your food processor.  

Traditional pesto uses pine nuts, but today Arielle opts for a healthier nut and uses almonds.  You can also use pistachios, walnuts or even hazelnuts.  Then add basil, fresh lemon, garlic, sea salt and olive oil. When talking about clean eating, Arielle likes to give different alternatives.  Traditional pesto uses parmesan cheese, however with the mixture of lemon, garlic, basil and kale, this recipe doesn’t even need the dairy. Then mix together your ingredients in the food processor.

For the pasta, Arielle uses brown rice pasta.  When clean eating, you’re allowed to have pasta, just make sure the ingredients are kept to a minimum.  Brown rice pasta only contains brown rice and salt.  Mix together and enjoy your kale pesto with brown rice pasta!

Ingredients
  • 1 box Brown Rice Pasta, penne or spirals
  • 1 kale leaf, de-stemmed
  • ½ cup olive oil
  • ½ tsp fresh lemon juice
  • dash pepper
  • 1 cup fresh basil
  • ¼ cup raw almonds
  • 1 garlic clove
  • ¼ tsp sea salt
Method
Make the brown rice pasta according to directions. In blender, blend up basil, garlic, kale and almonds until finely chopped. Add in olive oil, lemon, sea salt and pepper and blend until smooth. Once the pasta is ready, drain and rinse with cold water to prevent sticking Add the pesto on top of the pasta and viola! Serves 4
